About Simon

Simon Hardie is an accomplished chef with more than two decades of experience in luxury hospitality, currently leading the culinary direction for the iconic site Sovereign Hill for Peter Rowland Group.
He is known for his precision, creativity, and ability to deliver at scale, Simon supports within the business of Peter Rowland in large events across the group’s portfolio, including Melbourne Food and Wine Festival for Dine in the Shrine the first dining event ever held at Melbourne’s Shrine of Remembrance in its 90-year of history, as well has lead Dine in the Mines at Sovereign Hill again a another first.
Simon has led culinary teams for the Australian Open, Formula 1 Grand Prix, AFL Grand Finals, and The Ashes, consistently delivering world-class experiences to thousands of guests. His deep understanding of event execution, paired with his high-end culinary background makes him a respected chef in the industry.
Simon’s global career has included senior positions with Sheraton D Cube City Seoul,Rosewood London, Scott’s Restaurant, Mark Hix and Hyatt Regency London, The Churchill, where he was Director of Culinary and locally Grand Hyatt Melbourne and Hilton Sydney.
His style combines refined technique with a passion for seasonal regional and Australian produce with a modern, elegant presentation.
